As many of you know most of the contests here in Iowa are sanctioned by the Kansas City Barbecue Society (KCBS). KCBS is the world’s largest organization of barbecue and grilling enthusiasts. A majority of KCBS members cook on a competition BBQ team or judge at competitions. KCBS sets the standards for Rules and Regulations for judging BBQ competition events. The intent of these certification classes is to level the playing field for all BBQ competition teams.   These teams should never be penalized because a judge was not knowledgeable about the rules governing scoring procedures and criteria.

In this 4 hour seminar, you will not be told how to judge, but you will be instructed on the KCBS scoring system. The KCBS reps will emphasize that they want your opinion, not a group opinion. At the seminar, participants (judges) will simulate competition judging; self critique, and then a group discussion will be held about who scored what and why. During the seminar you will be judging product in the four (4) BBQ competition categories of Chicken, Pork Ribs, Pork Butt/Shoulder and Brisket.

KCBS has certified over 7000 judges! These seminars have been held in many, many states across the United States. The response is always favorable! It’s now time for you to become a Certified BBQ Judge! In short, BBQ competition teams feel they get a much fairer shot at prizes and bragging rights. The judging procedure runs more smoothly as the judges need less supervision and instruction.

The objective of the Table Captain class is to provide instruction to become a KCBS Certified Table Captain. Through this training one will be able to aid in providing consistency and fairness to the judging process. The Table Captain is a direct link between the BBQ competition team/cooks and the KCBS judging process. Responsibilities of a Table Captain are:

  1. To be knowledgeable of the KCBS Judging Rules.
  2. Control the judging process at your assigned judges table
  3. Follow all correct procedures in presenting, sampling entries and including team rotation.
  4. Make sure that proper sanitary standards are met/kept.
